The first daffodils are up, and we found an owl pellet!

This is our first time ever finding one. Owl pellets are the undigested remains of an owl meal that it coughs back up. I should have taken a before picture, but I wasn't sure what it was, so I pulled it apart with two sticks first. You can see the tiny bones of whatever it ate.

Making chocolate milk after a day of maple sugaring.

This was my daughter's first time making chocolate milk and after adding a quarter cup of milk (instead of one quart), she said "I think we should have doubled the recipe, Mom."

Homemade Hot Chocolate
Combine 1/3 cup sugar, 3 T cocoa, 1/8 tsp. salt, and 1/3 cup hot water. Bring to boil. Add 1 quart milk and heat through. Remove from heat and add 3/4 tsp vanilla. Sometimes I add less sugar and more cocoa.

Isn't it neat how the maple syrup flows through the filter in a spiral pattern?

We have about five gallons now, and unless we get another good run soon, we'll pull our taps. It's been a lot of work, but it feels so good to have our pantry full of jars of maple syrup we made ourselves.

I appreciate all the hard work my husband and sons put into this- hauling sap, cutting wood, keeping the fire going, sometimes through the night. I think we'll appreciate it all the more throughout the year knowing how hard we worked for it.

I’ve been looking for good sourdough discard rec

I’ve been looking for good sourdough discard recipes since starting sourdough bread. I love this sourdough granola recipe from @gingeredwhisk. I like how the sourdough makes the granola cling together, creating large clumps.

I always end up modifying recipes, so I here’s what I did.

Mix together:
1 cup sourdough starter
2/3 cup maple syrup
¼ cup melted butter
2 tsp vanilla

In a separate bowl, mix the following:
4 cups old-fashioned oats
1 cup coconut
½ tsp salt

Pour the wet ingredients into the dry and mix thoroughly. Spread on a cookie sheet and press into an even layer. Bake at 325 for 20 minutes or until brown. I ended up baking mine in our wood cook stove at a lower temperature for longer. The goal is to completely dry out the granola so it will store well. We ate the whole pan in one sitting, so I wasn't as worried about this.

Allow to cool on cookie sheet and then break into clusters. Add your favorite dried fruit. We love cut-up dried apricots and cranberries.

Next time, I’m going to try soaking the oat/sourdough mixture overnight for more health benefits. Soaking oats makes them easier to digest and keeps them from hindering the absorption of beneficial minerals. This is one of those things I know is good for you, but have never done.

I love using our wood cookstove to heat leftovers. Especially since we don't have a microwave. It's so handy to stick leftovers in the oven in the same glass containers they came out of the fridge in.

Another thing I like to do to save on groceries is stick any leftover in the freezer in one container that would be good for a chili/vegetable soup. This helps not waste tiny bits of meat and veggies.

I still throw food away sometimes, but I'm trying to do it less.

One of the things I love about sourdough is that you never know what to expect. I enjoy taking the lid off and being surprised each time.

I haven't been baking sourdough very long, and I'm still after the perfect loaf, but I think the texture is pretty good for 70% whole wheat. After all, as my teenage son said when I told him that I'm looking for more holes, "You don't want the jam to fall through "

If you want to start sourdough, I encourage you to just do it. I found a simple recipe online that didn't call for measuring or too many steps and began there.

I can see why people go down scientific rabbit holes, but it's not necessary at first. Just make sure your sourdough starter is active and dive in.
