I’ve been looking for good sourdough discard rec

I’ve been looking for good sourdough discard recipes since starting sourdough bread. I love this sourdough granola recipe from @gingeredwhisk. I like how the sourdough makes the granola cling together, creating large clumps.

I always end up modifying recipes, so I here’s what I did.

Mix together:
1 cup sourdough starter
2/3 cup maple syrup
¼ cup melted butter
2 tsp vanilla

In a separate bowl, mix the following:
4 cups old-fashioned oats
1 cup coconut
½ tsp salt

Pour the wet ingredients into the dry and mix thoroughly. Spread on a cookie sheet and press into an even layer. Bake at 325 for 20 minutes or until brown. I ended up baking mine in our wood cook stove at a lower temperature for longer. The goal is to completely dry out the granola so it will store well. We ate the whole pan in one sitting, so I wasn't as worried about this.

Allow to cool on cookie sheet and then break into clusters. Add your favorite dried fruit. We love cut-up dried apricots and cranberries.

Next time, I’m going to try soaking the oat/sourdough mixture overnight for more health benefits. Soaking oats makes them easier to digest and keeps them from hindering the absorption of beneficial minerals. This is one of those things I know is good for you, but have never done.

I love using our wood cookstove to heat leftovers. Especially since we don't have a microwave. It's so handy to stick leftovers in the oven in the same glass containers they came out of the fridge in.

Another thing I like to do to save on groceries is stick any leftover in the freezer in one container that would be good for a chili/vegetable soup. This helps not waste tiny bits of meat and veggies.

I still throw food away sometimes, but I'm trying to do it less.

One of the things I love about sourdough is that you never know what to expect. I enjoy taking the lid off and being surprised each time.

I haven't been baking sourdough very long, and I'm still after the perfect loaf, but I think the texture is pretty good for 70% whole wheat. After all, as my teenage son said when I told him that I'm looking for more holes, "You don't want the jam to fall through "

If you want to start sourdough, I encourage you to just do it. I found a simple recipe online that didn't call for measuring or too many steps and began there.

I can see why people go down scientific rabbit holes, but it's not necessary at first. Just make sure your sourdough starter is active and dive in.

If you want to really love gardening, try new varieties. We've had so much fun here ever since we started trying new things. These are some of our favorites from the last two years. I can't wait to see how the seeds we picked out for this year turn out.

🌱 Pink Berkeley Tye-dye Tomatoes - These were so pretty and early.
🌱 Chinese Red Noodle Bean
🌱 Dragon Tongue Bean- Very pretty and prolific. They actually made picking beans fun.
🌱Purple Potatoes- I don't know the variety since I picked them up locally, but I'm definitely planting them again.
🌱 Calico Popcorn
🌱 Rainbow Blend carrots
🌱 Candy Cane Zinnias
🌱 Scarlet Runner Beans - Even if you only plant a few, these are so pretty and fun to grow with kids.

We've had a cardinal pair hanging around our house

We've had a cardinal pair hanging around our house for a few years. They often come to our feeders and have made a nest in the bushes by the window.

The last few days, the female has been trying to get in the window. I have no idea what is causing this. She doesn't seem in danger of hurting herself, but she's been pretty persistent. The male usually just watches from the bushes.

I’m not sure why I’m so into sourdough lately. Maybe it’s because I never know what surprise will await me when I lift the lid to the Dutch oven.

Maybe it’s because it doesn’t take one big chunk of time, so I can squeeze it into any kind of schedule.

Or maybe it’s that sourdough is an art form, and I like creating things.

Being a homemaker doesn’t mean we bury our talents. We can use whatever gifts God has given us- baking, writing, drawing, painting, sewing, decorating, etc. to bring beauty to the lives of those who matter most.

“Through wisdom is an house builded; and by understanding it is established: And by knowledge shall the chambers be filled with all precious and pleasant riches.” Proverbs 23:3-4

(This is my seventh loaf in just over a week. It’s a good thing my family likes eating it as much as I like baking it. The loaf is ¾ whole wheat and was baked in our wood cook stove in a preheated Dutch oven after rising in the fridge overnight.)
